Easy recipe!

I went to Publix yesterday because I wanted my penny item- Publix water. Instead I found salad dressing... I have plenty but picked up some anyway for a penny. I chose the Kraft Catalina dressing. This got me thinking about a great recipe that uses Catalina dressing. It is an easy "pantry" recipe, and also includes bacon which was also on sale this week. I got this one from my parents and it's very good- and super easy!

I'm not sure the name, but I'll call them "Green Bean Stacks"...

Ingredients:
2 cans green beans (16 oz) (the whole, not cut, green beans work best)
1 package of bacon (you probably won't use the whole package)
Kraft Catalina dressing

Instructions:
Drain the green beans. Pick up a small handful of beans (approx. 5-8 beans) and wrap each "stack" with 1/2 a slice of the bacon. Place the "stacks" in a casserole dish, be sure the part where the bacon overlaps is facing down. After you've assembled your stacks, give each a good little squirt of the Catalina dressing (around a tablespoon). It's ok to be a little generous. Cover tightly with foil. Bake at 350 for 30-45 minutes until the bacon is crispy on top.

Note: if you use thick cut bacon plan to increase the cooking time a bit. To add to the bacon crispness, you can also take the foil off for the last few minutes and turn on the broiler.

These are delicious, and a quick and easy side item. Enjoy!

  1. We use the Catalina for "Ranch Salad" which is ground beef (or turkey)cooked and drained, lettuce, tomatoes, cheese, onions, and corn chips (Fritos)- if you pour the Catalina over the drained meat while it is still warm and then mix all together and eat like a salad- YUM! Susan
